Increasingly, microbiology is something of an afterthought in the world of brewing and tends only to be important when it goes wrong!  Given this its a little bizarre how many senior people in the brewing industry come from from a microbiological background!  Although lacking the glamour of analytical testing, microbiology has been refreshed in recent years with the implementation of bioluminescence for real time hygiene testing.  This technology has contributed to raising the profile of process hygiene and encouraged quality to be 'built in' rather than simply tested for.
