'In the the theatre of brewing, yeast is viewed, quite inappropriately, as a 'supporting actor'.  This opening line from 'yeast supply and propagation in brewing' (Quain, D.E (2006), 167-182, in Brewing new technologies, ed C.W. Bamforth, Woodhead Publishing).  Yeast reflects the 'its a given' profile of yeast in breweries.  A perception that might change if yeast was purchased as a raw material from a supplier.  There is an argument for a yeast 'supply chain' that integrates the various processes in such a way that each is optimised so as to benefit yeast quality.  Adoption of this philosophy would elevate yeast to its rightful place as the leading player in the brewing process.
